Easy food to make during covid-19

You all know me as a foodie, food critic, and eater-outer! You follow for my food challenges and food reviews at restaurants! So when covid-19 hit, I was completely caught off guard! The thing I talk about the most on my blog….is paused. All restaurants have been closed down except for those offering take-out and delivery. For me personally, eating out was a big part of my life! And I loved sharing it with you all!

Now that we’re about a month into social distancing, I’ve had to come up with some quick easy meals to make at home. And not just the one meal a day like before I was doing; we’re talking three meals a day.

I’m going to share some quick and delicious food I’ve been making at home that you can easily make too! I am no expert at all when it comes to cooking or baking so you can pull off any of these at home! I have been working on stocking up on fresh produce like I normally do. But I’ve also been investing in some frozen things I can quickly whip together in a pinch.

Avocado Toast

This is perfect if I need a quick filling lunch. I’ll buy a bag of avocados from Costco (they’re the best) and smother them on Sprout Bread toast with whatever toppings I have in my fridge! Here I have alfafa sprouts, cherry tomatoes, and salt and pepper.

Vegan tuna salad toast

This is also another great lunch idea on bread. Instead of tuna, I mash chick peas in a bowl with again, whatever toppings I have in my fridge and put on toast! Here I have pickles, celery, peppers, onions, and mayo in my spread.

Butter chicken sauce

Poppadom’s butter chicken sauce is AMAZING! Normally if I buy a pre bought sauce, I always have to add extra ingredients to improve it, but you don’t need to with this one as it’s perfect the way it is. Here, I added some veggies (you can add chicken or another protein if you want) on top of rice and boom, you got yourself dinner! They also have great samosas too that you can heat up.

Quinoa salad

Quinoa is a healthy grain that I have all the time. I will cook several cups of it and then put in the fridge to chill. Then, I’ll add my favorite veg and make it into a salad! It’s great because the quinoa really fills you up but you’re still getting your greens. Here I have corn, black beans, chick peas, edamame, fresh basil, and some other veg.

Eggs

I always like to keep eggs on hand! Whether I scramble them, fry them on toast or a bagel, or add them to fried rice! Eggs are great because they can last for weeks and are a great source of protein.

Perogies

Perogies are also something I like to keep on hand. They’re delicious and all you have to do is pull them out of the freezer and heat them up. I love frying onions with mine and dipping them in hot sauce!

Smoothie bowl

A smoothie bowl is yummy and so fun to make! I blend up yogurt, fruit, and whatever liquid I have (juice, almond milk etc) and pour it into a bowl with fruit and granola.

Speaking of granola, another go-to I have is yogourt, granola, a fruit of my choice, and hemp hearts. Super easy to make and filling!

Guacamole

A great snack to have on hand is guacamole. Mash up your avocados and add everything to taste! I personally dice up tomatoes, onions, cilantro, salt and pepper, fresh lime, and garlic. Yum! The best is to serve with lime flavored tortilla chips.

Chocolate chip cookies

Lastly, we can’t forget about dessert. Who doesn’t love cookies?! This is a super easy recipe off of Tasty that ANYBODY can make and it produces the yummiest chocolate chip cookies. Click here for the recipe.
