My Healthy AND Delicious Snack Recipe
So now that summer is over, I am back on the eating healthy train cause let’s face it, summer has been crazy busy and I’ve all been doing is eating and drinking lol. Time to kick my butt back into gear!!!
I’ve never been a “dieter” but I do believe it is super important to eat healthy, nutritious food. That being said, it has never worked for me to completely deprive myself of junk food or I cave and eat even more of it! If there is one lesson in life that I’ve learned about diet, it’s balance.
For example, I can crush a bag of Kettle Chips. However, if I was to get into the habit of eating them every single day, then we would have a problem…lol. So I eat chips in moderation.
There is a stigma around healthy food being boring or not tasty. That’s true sometimes…but there ARE delicious healthy foods out there, you just have to find the one that is delicious to YOU. For me, that is salad. For others, maybe they find salad dull. But I love a good, fresh salad. The great thing about salads is that there are so many variations and no rules.
You can make a different salad every day. For me, I just use whatever is in my fridge.
That being said, I always have some kind of leaf in my fridge to give my salad some “body” if I don’t have any vegetables. This can be spinach, kale, lettuce, mixed greens, whatever you want.
I also like to have a high-quality leaf and non GMO or organic if possible. For me, my go to is Inspired Greens. I find their lettuce is always super fresh and even better, pesticide free. Inspired Greens is also a local company from Alberta, Canada!
Another thing I love about Inspired Greens is the longevity of their lettuce. I live on my own and I find buying lettuce in the pre-packaged containers from the grocery store is a waste. I never finish it in time before it starts to go bad. Inspired Greens lettuce is unique in the fact that it has its roots still attached which keeps the lettuce lasting longer. How great is that?
Here is a salad I made the other day.
Recipe:
Note: I don’t ever use measurements. All depends on preference.
- Inspired Greens lettuce
- tomatoes
- cucumbers
- green peppers
- onions
- avocado
- carrots
- white onions
- chick peas
- fresh herbs if you have (parsley)
- egg
- sauerkraut
- hemp hearts
- feta cheese
Dressing:
This is my own recipe, modify how you wish.
- 3 tbsp olive oil
- 1 or 1 ½ tbsp balsamic vinegar
- salt & pepper to taste
- fresh minced garlic
- sometimes fresh oregano (or dried works)
To me, THIS is delicious.
