Fish Taco Challenge – Restaurant #1

What even makes a great fish taco?!

For me, it comes down to three components:

  1. The fish – I like a white lean fish, needs to be grilled or deep-fried
  2. Tortilla – I prefer a corn tortilla over a flour tortilla as it’s more flavourful, needs to be grilled and warm, you don’t want a raw tortilla
  3. The sauce – it’s all about the cream sauce for a fish taco, the sauce ties everything together and gives it that overall freshness
