What even makes a great fish taco?!
For me, it comes down to three components:
- The fish – I like a white lean fish, needs to be grilled or deep-fried
- Tortilla – I prefer a corn tortilla over a flour tortilla as it’s more flavourful, needs to be grilled and warm, you don’t want a raw tortilla
- The sauce – it’s all about the cream sauce for a fish taco, the sauce ties everything together and gives it that overall freshness
